Paul:
Castlegregory is in Killiney civil parish. I checked the 1852 Griffiths Valuation head of household listing for Killiney parish and there was only 1 Hayes listed and no Listons. http://www.failteromhat.com/griffiths/kerry/killiney.htm
Not sure why a child from Limerick would be baptized in a parish which is a good distance away from Co. Limerick. I thought maybe the mother was from that area but there was no Listons shown.

Thanks Roger. I guess there was some connection to the place. Maybe they were related to the priest, but it's lost in time now.

Dear Paul, there may be no connection but there are a number of Liston families in Monageagh Parish in Co. Limerick. That is around modern day Newcastle West, Co. Limerick.
I suggest you go to familysearch.org. I found 44 Catherine Liston's there with Limerick as their marriage place in the 1800's. Without more information it is not possible for me to ascertain if any of them are yours. Maybe you will have better luck.
It is worth a shot since there are only 6 Liston's in Kerry in 1901 which does suggest that Catherine might have been from Limerick.
Let me know how you get on and if it would be worth contacting one of the Liston's who lives in Monageagh parish today.
Best wishes
Martine
