Welcome to Ireland Reaching Out!
I was able to locate the marriage record for Catherine and William. Transcription below. I was having difficulty finding a baptismal record for Johanna, her marriage record and the baptismal record for the Burke children. Also could not locate Catherine's baptismal record. Part of the problem is likely the availability of records There are gaps in the records which I think is making it difficult to find records. Here are the links to the parish registers for Castlecomer and Muckalee.

I also looked at the 1849 Griffiths Valuation head of household listing in Castlecomer and Muckalee parishes. There were no Burkes in Castlecomer but two John Burkes in Muckalee parish http://www.failteromhat.com/griffiths/kilkenny/muckalee.htm
We also have a parish liaison for Muckalee and I will alert him about your message.
Let me know if you have any questions.

Thanks for the helpful information and links, Roger.
When the Burke family emigrated in 1853 they said that they came from Muckalee so it's possible that the John Burke shown there in the Griffiths Valuation is this John.
We do have a photo of a house in Muckalee which is supposedly the one the Burkes lived in before emigrating.
Thanks again,
Helen
