Did Matthew and Catherine marry in Ireland? If they did, you should be able to find their marriage certificate in civil records. This will give you some useful information including their father's names.  Civil records are available from the General Register?s Office in Dublin. Here is their website:

You could also look in church records. Most Catholic records are held locally so you may need to write to the local parish priest for possible assistance.
