This is the only info I can find on a Carroll in Monsea Parish. The name Rody Carroll appears on Johanna Grace's Baptismal record as a sponsor on 01 Jan 1868. Thus Carrolls may have lived in Monsea or Ardgregane and knew the Grace's well enough to be a sponsor.
I also have found that a James Carroll and Mary Carroll were sponsors for John Meagher's Baptism on 08/03/1835. The parents were Thomas Meagher and Bridget Minogue who lived in Nenagh.

Hi Leonore,
There was a William and Michael Carroll recorded in Monsea parish in Griffith?s Valuation in 1852. This is a property valuation survey carried out in Ireland 1848-64.
There were also Carrolls recorded in the earlier land records called the Tithe Applotment Books (1823-38):
