Hi Trevor
The closest match for Hatch born 1844 + - 6 years in Louth on www.rootsireland.ie/ is Thomas 1838 & Anne 1838. However Anne was registered in Collon parish while Thos was registered in Ardee.
You need to purchase credit to view the full record on rootsireland but it MAY give you the father's name.

Hello Treavor
in addition to the above Griffiths Valuation on this site http://www.askaboutireland.ie/griffith-valuation/
shows 32 Hatchs in Louth with 2 in Collon but the others are in adjoining areas. It was done about 1854 and has little maps showing location.
Also Collon has a history website with contact details but I am only suggesting this. See http://www.collonhistoricalsociety.com
Also a good site for Louth is http://www.jbhall.freeservers.com A lot of detail here.
finally in case of confusion Louth is in the religious diocese of Armagh.
regards
Pat
